Lactation Cookies

I made some lactation cookies today and I just had to share this with you all. Ive had my share of lactation cookies in the past. Ive tried quite a few recipes but I have never had any lactation cookies as delicious as Ive had today.  Usually the ones Ive had are very dry and crunchy. And lets be honest, brewer's yeast (the main ingredient) doesn't taste great. But these are a real game changer. These were super moist, gooey, chewy and just freaking amazing.

So here is what your going to need:

Ingredients

  • 1 cup butter
  • 4 cups flour
  • 1 cup sugar
  • 1 cup firmly packed brown sugar (I used light)
  • 4 tablespoons water
  • 2 tablespoons flaxseed meal
  • 1 1/2 teaspoon vanilla extract
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3 cups oats
  • 1 cup chocolate chips (I used milk chocolate)
  • 2-4 tablespoons brewer's yeast (I used 4 tablespoons)

Directions:
  1. Preheat ove to 350 degrees
  2. Mix the flaxseed meal and water and let sit for 3-5 min (longer is ok too)
  3. Beat butter, sugar, and brown sugar well
  4. Add eggs and mix well
  5. Add flaxseed mix ad vanilla, beat well
  6. Sift together flour, brewer's yeast, baking soda and salt
  7. Add dry ingredients to butter mix
  8. Stir in oats and chips
  9. Scoop onto baking sheet (about the size or a golf ball)
  10. Bake for 12 minutes
  11. Let sit for a couple minutes then rove from tray

Makes about 50 cookies.

I know people are going to ask so Ill let you know where I got all this before you even ask. I had previously got my brewer's yeast from Amazon.com and had some leftover and used that. Everything else I got at my local grocery store. Except the flaxseed meal I found at Target in the baking isle.

You'll want to eat between 2-4 cookies a day. Start off with two and increase if you don't see an increase in your milk supply. An increase usually happens between a few hours and a few days of eating these lactation cookies.

Enjoy!

PS. Its perfectly fine for your partners and kids to eat these cookies too. They aren't limited to just the nursing mother... though thats what I tell my family so they don't eat them, HA!
